Hey y’all! Golly, is the heat rollin’ in or what? Summer’s here, and my two sweet boys are all about those popsicles!
This time of year always takes me back to my childhood, racing into my grandmother’s house after school, bursting with excitement. She’d be waiting with a twinkle in her eye, eager to share that she’d spent all day whipping up one of our favorite dishes. She’d chatter on about her cooking, her voice full of pride, only to confess with a sheepish grin that she’d sampled it so much throughout the day, she accidentally ate it all! “It’s the thought that counts, honey,” she’d laugh, and we’d end up making more together. That memory of her love and those shared moments inspires these Sweet Carolina Popsicles.
They’re so simple to make, and my boys absolutely LOVE them. The second they hear the blender whirring up these delicious treats, they come sprinting to the kitchen, begging for a taste before I pour the mix into the molds. Every morning when they wake up and every afternoon when they get home from daycare, they’re racing to the freezer to check for these yummy treats. The only downside? They always beg for more than one! There’s nothing like savoring these popsicles on the front porch, soaking in the sunshine and that sweet summer vibe! Here’s the recipe for these delicious, healthy popsicles. I hope y’all enjoy them as much as we do!
Sweet Carolina Popsicles

2 cups fresh strawberries, hulled (or your favorite berries)
1 cup plain Greek yogurt
1 pint of blueberries
2 tablespoons honey (adjust to taste)
1 frozen banana
Directions
- Blend It Up: Toss the berries, Greek yogurt, honey, and banana into a blender. Blend until smooth and creamy.
- Taste Test: Give it a quick taste and add a bit more honey if you want it sweeter.
- Pour & Freeze: Pour the mixture into popsicle molds, leaving a little space at the top. Insert sticks and pop them in the freezer for 4-6 hours, or until fully frozen.
- Enjoy: Run the molds under warm water for a few seconds to release the popsicles. Serve and watch those smiles light up!

Notes
- Swap strawberries for pineapple, mango, or peaches for a fun twist.
If you don’t have popsicle molds, use small paper cups and wooden sticks.
Double the batch…they disappear fast!
If it gets too chunky, you can add a splash of milk to help with blending.
